LETS EAT CAKE FOR BREAKFAST

Greetings to all my fellow bakers out there! I am so excited to (finally) start blogging about all of my tasty creations. In honor of my first blog post, I decided to dedicate it to these handsome fellas! Seriously, how adorable are these Cookie Monster chocolate coconut cupcakes?! And the best part? They're superrrr easy to make! Let's get started!

To keep things simple, I used a classic chocolate cupcake mix as a base. My favorite cake mix is Betty Crocker's Super Moist Cake Mix, Devil's Food. It's extra decadent and chocolaty - just the way I like it!

After baking your cupcakes, always be sure to let them cool for at least 30 minutes before decorating.

Now, after they're cooled off, we can begin the fun part!

Here's what you'll need...

Ingredients:

Pillsbury Vanilla Frosting, Funfetti Aqua Blue
Chips Ahoy cookies (or any small chocolate chip cookies)
Sweetened shredded coconut flakes
Blue food coloring
Large Puff marshmallows
Chocolate chips
Kitchen Scissors
Tooth pick

First thing's first, frost the cupcakes! You don't have to be too technical when frosting these cupcakes; don't try to make it look fancy or anything, just frost away!
After frosting, set aside to prepare the rest of the face...
In a large bowl, combine coconut flakes and a few drops of the blue food coloring.
Hand mix and continue to add blue food coloring drops until the coconut flakes turn "Cookie Monster blue."
Once you've reached the desired color blue and the coconut flakes are entirely colored, set bowl aside.
And for the eyes... Using the kitchen scissors, cut the marshmallows in half to form the eyeballs.
Then, take each of the half marshmallows and, using the toothpick, poke a little hole towards the bottom of the marshmallow so the chocolate chip has a spot it can stick to.
Take one chocolate chip and place it in each of the holes you formed on each of the marshmallows from the toothpick.
Once you have all of your eyeballs formed, set aside.
Back to the frosted cupcakes... Take each of the frosted cupcakes and simply dip them into the bowl of shredded coconut flakes and voila! Beautiful little cookie monsters.
When you are finished dipping each cupcake, get two half marshmallows with the chocolate chips in them and place them at the top of each cupcakes as eyes.
After giving each cute little monster some eyeballs, you must give him his cookie!
Break each chocolate chip cookie in half.
Take each half cookie, spread a little icing on it so it can "stick," and place it where the mouth would be.
