Pumpkin Spice & Everything Nice

Hello to all my baking friends!
As the leaves begin to change and everyone's cute sweaters begin to reemerge, you know fall - a.k.a. pumpkin spice season - is right around the corner. And if you're anything like me, you fully embrace the "girlie girl" stereotype of loving everything that has to do with pumpkin! Pumpkin spice lattes, pumpkin pie, pumpkin decor, pumpkin cookies, pumpkin candles... I can go on and on! So in honor of pumpkin season, I decided to make a decedent Pumpkin Spice Cupcake with Cinnamon Cream Cheese frosting. I don't think words can describe how much I love these cupcakes! I make them constantly this time of year because they are my friends' and family's favorite!
Now here's how to recreate these delicious pumpkin spice taste bud pleasers :)


First, we make the cupcakes from scratch!
Pumpkin Spice Cupcake Ingredients:
1 cup flour
1 tsp pumpkin pie spice
1 tsp baking powder
1/2 tsp cinnamon
1/2 tsp baking soda
1/2 tsp salt
1 cup pumpkin puree
1/2 cup brown sugar
1/2 cup sugar
1/2 cup vegetable oil
2 eggs
First, preheat the oven to 350 degree Fahrenheit and line the cupcake pan with cupcake tins. Then, mix all ingredients in a large bowl. After all ingredients are combined, scoop into the cupcake tins, filling each tin about 3/4 of the way full. Bake the cupcake for about 20 minutes or until the end of a fork inserted in the center comes out clean. Remove and let cool.
While the cupcakes are baking, you can make the cinnamon cream cheese frosting!

Cinnamon Cream Cheese Frosting Ingredients:
1 1/2 tsp cinnamon
1 tsp vanilla
3 cups powdered sugar (add 1-2 extra cups more to reach a thicker, creamier consistency!)
6 oz cream cheese, softened ( you can even add more for a more decedent cream cheese taste)
6 tbsp butter, softened
For the frosting, beat together the butter and cream cheese until you have a smooth consistency. Begin adding the powdered sugar until it starts to become light and fluffy. Mix in the vanilla and cinnamon. As mentioned in the ingredients, you can also add more cream cheese and/or powdered sugar now to reach desired flavor and consistency. If you add more powdered sugar and cream cheese, you may also want to add another teaspoon of vanilla and cinnamon as well. Don't worry, you can't mess up this frosting recipe! It is delicious no matter how much of each ingredient you decide to add :)
